Shiitake Fried Rice
1 cup dry rice, prepared per package directions
2 Tbs sesame oil
1 Tbs olive oil
1 clove garlic, minced
8 oz shiitake mushroom caps, sliced or diced
3 eggs, scrambled together
2 Tbs soy sauce
1/4 c scallions, chopped
Prepare rice according to package directions.
Add 1 Tbs sesame oil to a saute pan, and heat on medium high. Add garlic, saute until fragrant.
Add shiitake mushrooms, and saute until tender. Set aside.
Using the same pan you just used for the mushrooms, heat olive oil to medium, then add eggs. Cook until there is no longer any visibly liquid egg, cutting the egg into small pieces as you cook. Set aside with the mushrooms.
Add 1 Tbs sesame oil to saute pan, and heat on medium high. Add cooked rice and soy sauce, saute until well mixed (about 1 minute).
Mix all ingredients together in the pan, and saute until well mixed and warm throughout (about 1 minute).
Top with scallions, and serve with your choice of protein and vegetable.
Try adding cabbage, or other fresh vegetables to your saute pan, and mix together.
Other mushrooms also make a great addition - try cutting king oyster mushrooms into matchsticks, and saute before mixing.
Top with sesame seeds if desired.
